Ritz Cracker Mock Apple Pie - cooking recipe

Ingredients
    18 Ritz crackers
    1 c. water
    1 c. sugar
    1 tsp. cream of tartar
    1 Tbsp. lemon juice
    1/2 lemon rind, grated
    butter to your liking
    1/2 tsp. cinnamon
Preparation
    Roll out bottom crust of pastry; put in 9-inch pie pan.
    Bake 18 Ritz crackers, coarsely crushed, in pastry lined pan.
    Combine water, sugar and cream of tartar in saucepan; boil gently for 15 minutes.
    Add lemon juice and lemon rind; cool.
    Pour syrup over crackers.
    Dot generously with butter and sprinkle with cinnamon. Cover with top crust.
    Trim and flute edges together.
    Cut slits in top crust to let steam out.
    Bake in hot oven (425\u00b0) for 30 to 35 minutes until crust is crisp.
    Serve warm.
    Makes 6 to 8 servings.
