Bruschetta With Chicken - cooking recipe

Ingredients
    1 loaf Italian bread
    6 oz. chicken breast, grilled or broiled, diced
    8 medium roma tomatoes, diced
    6 garlic cloves, minced or pressed
    2 Tbsp. olive oil
    1 1/4 c. ricotta cheese
    2 Tbsp. dried basil
    1 1/2 tsp. dried parsley
    1 tsp. salt
    1 tsp. black pepper
    Balsamic vinegar, optional
Preparation
    Mix ricotta with salt, pepper and parsley; set aside. Mix together chicken, tomatoes, garlic, olive oil and basil; season to taste with salt and pepper; set aside. Slice bread into 12 slices. Broil until lightly toasted, turning once. Spread ricotta mixture on bread, top with tomato mixture and balsamic vinegar (if using). Serve immediately.
