Eggplant-Onion Casserole - cooking recipe
Ingredients

1 med. Eggplant
1 Red onion, chopped
1 cup grated cheese
1 egg, beaten
1/2 cup milk
salt, pepper to taste
bread crumbs, buttered
Preparation

Peel eggplant, cut into small pieces, cover with water and salt and pepper.
Boil until tender.
Drain.
Add cheese, egg, onion and milk.
Put into buttered casserole dish, top with buttered bread crumbs. Bake at 350\u00b0 for 1 hour.
