Sweet Potato Pie - cooking recipe
Ingredients

2 c. cooked, mashed sweet potatoes
1/2 c. butter or margarine, softened
2 eggs, separated
1 c. firmly packed brown sugar
1/4 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. milk
1/4 c. sugar
1 unbaked 9-inch pie shell
additional spices (optional)
whipped cream
orange rind
Preparation

Combine sweet potatoes, butter, egg yolks, brown sugar, salt and spices.
Mix well.
Add milk, blending until smooth. Beat
egg whites until foamy and gradually add sugar, beating until
stiff. Fold
into sweet potato mixture.
Pour into pie shells
and sprinkle with additional spices, if desired.
Bake at 400\u00b0
for 10 minutes.
Reduce heat to 350\u00b0 and bake 30 more minutes.
When cool,
garnish
with
whipped cream and orange rind.
