Minted Cucumber Soup - cooking recipe
Ingredients

2 medium cucumbers, peeled
1 medium onion, chopped
1/2 c. packed fresh mint leaves
1 c. chicken broth
1 c. yogurt
pepper to taste
1/2 c. chopped walnuts, lightly toasted
Preparation

Slice cucumbers thickly.
Combine 1 1/2 cucumbers with onion, mint and broth in blender container. Process until finely chopped. Pour into serving bowl. Blend in yogurt and pepper. Chill, covered, for 1 to 2 hours.
Adjust seasonings.
Garnish with reserved finely chopped cucumbers, walnuts and freshly chopped chives.
