Sweet Potato Fritters - cooking recipe
Ingredients

2 c. mashed sweet potatoes
1/4 tsp. salt
4 tsp. butter or margarine
1 c. milk
1/2 c. self-rising flour
1 Tbsp. sugar
2 eggs, separated
Preparation

Combine potatoes, butter, sugar, milk and egg yolks.
Beat until smooth.
Sift flour and measure.
Add to the first mixture. Beat egg whites until stiff and fold in beaten egg whites.
Drop by teaspoon into deep-fat (365\u00b0).
Fry until brown.
Drain on absorbent paper towels.
Sprinkle with powdered sugar.
Makes 10 servings.
