Stir-Fried Chicken With Almonds - cooking recipe

Ingredients
    4 whole chicken breasts
    1/4 c. soy sauce
    2 Tbsp. dry sherry
    2 Tbsp. orange marmalade
    2 tsp. cornstarch
    1/4 tsp. ground ginger
    1/4 tsp. cayenne pepper
    2 (6 oz.) pkg. frozen Chinese pea pods, thawed
    2 Tbsp. salad oil
    1/2 tsp. salt
    4 1/2 oz. can blanched whole almonds
    1 medium bunch scallions (white part only)
Preparation
    Cut chicken breasts into bite-size chunks.
    In a medium bowl, combine chicken, soy sauce, sherry, marmalade, cornstarch, ginger and cayenne pepper.
    Set aside.
    Drain pea pods and pat dry with paper towels.
