Hank'S Cajun Red Beans And Rice - cooking recipe

Ingredients
    1/2 lb. (1 c.) dried red beans
    2 c. water
    2 lb. ham hocks
    4 celery ribs, chopped
    1 medium onion, chopped
    1 green pepper, chopped
    3 bay leaves
    1 tsp. dried thyme
    2 tsp. powdered garlic
    1 tsp. black pepper
    1/2 tsp. cayenne
    1 tsp. white pepper
    1 1/2 tsp. Tabasco
    1/2 lb. sausage
Preparation
    Soak beans overnight or quick soak.
    Cook ham hocks in 3 cups boiling water at least 2 hours.
    Drain beans.
    Add all ingredients to hocks.
    Continue to cook until ham hocks are tender, 30 minutes.
    Remove ham hocks and cut into small pieces after it cools.
    Slice sausage into 1/2-inch pieces and brown in skillet. Add sausage and ham to pot and cook another 30 to 40 minutes. Remove bay leaves and serve with rice.
