Antipasto Rice Salad - cooking recipe
Ingredients

2 c. cooked Uncle Ben's converted rice
1/2 c. diced low-fat American cheese
1 small can sliced black olives
1 c. chopped tomatoes
1/2 c. lite Italian dressing
1 1/2 c. diced ham and smoked turkey
1 green pepper, diced
1 onion, diced (if desired)
1 pkg. defrosted frozen peas
Preparation

Cool the cooked rice (may be cooked the day before and put in the refrigerator).
Add the Italian dressing, diced ham and turkey, cheese, pepper, onion, black olives and peas.
Chill 1/2 hour.
Add the chopped tomatoes.
Delicious!
