Champon(Japanese Noodle Soup) - cooking recipe

Ingredients
    olive oil
    1 medium onion, cut in large pieces
    2 small carrots, thinly sliced
    1 stalk celery, thinly sliced
    1/2 bell pepper, coarsely chopped
    2 c. cabbage, chopped in 1-inch squares
    4 shiitake mushrooms, sliced
    pork, shrimp or chicken (optional)
    4 c. water
    2 pkg. Ramen noodles
Preparation
    Start water to boil in a large pot.
    In wok or iron skillet, pour enough oil to coat. Heat to saute. Add vegetables, individually, except mushrooms. When they begin to wilt, sprinkle with teriyaki sauce. Cover, but stir often.
    Add Ramen and flavor packets to boiling water and boil 6 to 8 minutes. When done, turn off and let sit in water.
