Spicy Peanut Chicken(6 Servings) - cooking recipe

Ingredients
    1 c. teriyaki sauce
    3/4 c. chunky peanut butter (no fresh ground)
    1/2 c. water
    1 Tbsp. sugar
    8 quarter size slices peeled fresh ginger
    1 tsp. dried crushed red pepper
    6 skinless boneless chicken breasts, halved
Preparation
    Combine all ingredients, except chicken, in top of double boiler over simmering water; stir until smooth.
    Cook until very thick, stirring frequently, about 20 minutes.
    Cool at room temperature.
    Discard ginger.
    Place chicken in a large baking dish.
    Brush sauce generously (both sides).
    Cover and let stand 30 minutes.
    Preheat oven to 350\u00b0.
    Spoon remaining sauce over chicken.
    Bake approximately 20 minutes.
