Streusel-Topped Sweet Potato Casserole(Low Calorie) - cooking recipe

Ingredients
    3 lb. sweet potatoes, cooked
    1/2 c. plus 1 Tbsp. unsweetened orange juice
    3 Tbsp. brandy
    1 tsp. grated orange rind
    1 tsp. butter flavoring
    1/4 tsp. ground ginger
    1/4 tsp. salt
    1/8 tsp. pepper
    3 egg whites
    1/2 c. firmly packed brown sugar
    vegetable cooking spray
    1/3 c. chopped pecans
    3 Tbsp. all-purpose flour
    1 tsp. ground cinnamon
    1 1/4 c. finely chopped Rome apple
Preparation
    Mash sweet potatoes.
    Add 1/2 cup orange juice and next 6 ingredients.
    Stir well and set aside.
    Beat egg whites at high speed until soft peaks form.
    Gradually add 1/4 cup brown sugar, beating until stiff peaks form.
    Gently stir 1/4 cup of egg white mixture into potato mixture.
    Gently fold remaining egg mixture. Spoon potatoes in an 11 x 7 x 2-inch baking dish coated with spray; set aside.
