Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red beans, soaked overnight
    1 medium yellow onion, chopped
    1 bunch green ononns, chopped
    7 cloves garlic, chopped fine
    1/2 c. chopped parsley
    salt and pepper to taste
    1 rib celery, chopped
    cooked rice
    1 green pepper, chopped
    1/2 c. ketchup
    1 Tbsp. Worcestershire
    2 tsp. Tabasco
    2 whole bay leaves
    1 tsp. whole thyme leaves
    2 lb. smoked sausage, cut in 1-inch pieces and rinsed
Preparation
    Drain beans.
    Put them in a 6-quart heavy pot and add 3 quarts water.
    Cover and simmer for 1 hour or until beans are tender. Watch that water does not boil down too far.
    The beans must have water on them at all times.
    Add the rest of the ingredients, except the cooked rice, to the pot and more water to cover, if needed.
    Simmer partially covered, for 1 to 1 1/2 hours or until liquid has thickened.
    Serve over cooked rice.
