Ever Ready Muffin Mix(Yields 96 Muffins) - cooking recipe

Ingredients
    1 (15 oz.) box Raisin Bran
    1 lb. box raisins
    5 c. flour
    3 c. sugar
    1 Tbsp. plus 2 tsp. soda
    2 tsp. salt
    4 eggs, beaten
    1 qt. buttermilk
    1 c. vegetable oil
    2 c. pecans
Preparation
    Sift flour, sugar, soda and salt together (using large mixing bowl).
    Mix with cereal, raisins and nuts; make a well in center of mixture.
    Pour in milk, eggs and oil.
    Stir with a spoon, starting in center and work slowly to outside; stir only until moist.
    Bake in greased muffin pan, 18 to 20 minutes at 400\u00b0. Batter maybe kept in refrigerator up to 6 weeks.
    Do not freeze batter!
