Apricot Chicken - cooking recipe

Ingredients
    2 1/2 lb. chicken thighs (about 8)
    1/3 c. apricot preserves
    2 Tbsp. soy sauce
    1 Tbsp. lemon juice
    1 clove garlic, minced
    1/2 tsp. ginger
    2 tsp. minced green onion
Preparation
    Remove skin from chicken.
    Arrange chicken in 12 x 8-inch baking dish.
    In a small bowl, combine preserves, soy sauce, lemon juice, garlic and ginger.
    Brush chicken with some preserve mixture.
    Cook, covered with wax paper, on High for 14 to 18 minutes, until tender or juices run clear when pierced with a knife.
    Occasionally brush chicken with preserves and rearrange halfway through cooking.
    Put on rest of preserves.
    Sprinkle with green onion.
    Serve with hot rice.
    Serves 4.
