Pineapple Cake For A Crowd - cooking recipe

Ingredients
    1 (14 oz.) can crushed pineapple
    1 c. coconut
    2 c. flour
    1 tsp. baking powder
    1/2 tsp. soda
    1/4 tsp. salt
    1 stick oleo
    2 eggs
    dash of ginger
Preparation
    Preheat oven to 375\u00b0.
    Grease 15 x 10 x 2-inch jelly roll pan. Mix 3/4 cup undrained pineapple with coconut and set aside.
    Work shortening until soft.
    Add the sugar until mixture is creamy. Add eggs one at a time.
    Stir in dry ingredients alternately with remaining pineapple and juice.
    Pour into pan and sprinkle with pineapple topping and bake about 25 to 30 minutes or until cake pulls away from sides of pan.
