Ham And Vegetable Casserole - cooking recipe

Ingredients
    1 1/2 c. diced potatoes
    1 1/2 c. diced carrots
    1 onion, thinly sliced
    1 1/2 c. boiling water
    2 Tbsp. butter
    2 Tbsp. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1/2 c. evaporated milk
    1 1/2 c. coarsely chopped cooked ham
    3 Tbsp. minced parsley
    1/4 c. grated American cheese
Preparation
    Cook potatoes, carrots and onion in boiling water.
    Drain vegetables, reserving cooking water.
    Add enough milk to vegetable water to make 1 1/2 cups.
    Melt butter in skillet and add flour and seasonings; stir until smooth.
    Add milk-vegetable water gradually, stirring until thick.
    Combine vegetables, ham, parsley and sauce and turn into buttered casserole.
    Sprinkle with cheese and bake in 375\u00b0 oven about 25 minutes, just until cheese is golden brown.
