Evelyn'S Fruit Cake - cooking recipe
Ingredients

1 1/2 c. sifted flour
1 tsp. baking powder
1 tsp. salt
5 1/2 c. pecan halves
6 eggs
1/2 c. corn syrup
1 1/2 c. sugar
2 (8 oz.) pitted dates
1 (16 oz.) jar pineapple preserves
4 c. drained maraschino cherries
1/2 c. dark rum
Preparation

Grease large loaf pans.
Line with foil and grease again. Sift flour, sugar, baking powder and salt in large mixing bowl, adding fruit and pecans.
Mix well.
Beat eggs and rum.
Pour over mixture.
Pour into loaf pans.
Bake in 300\u00b0 oven for 1 3/4 hours. Cool in loaf pan 15 minutes.
Brush top with corn syrup while warm.
