Sweet Potato Bread - cooking recipe
Ingredients

5 eggs
2 c. sugar
1 1/2 c. oil
2 tsp. cinnamon
3 c. plain flour
2 tsp. soda
1 c. chopped pecans
1 (8 oz.) box chopped, sugared dates
2 c. mashed, cooked sweet potatoes
2 pkg. coconut pie filling (Jell-O)
1 c. coconut
1 tsp. salt
Preparation

Beat eggs until fluffy.
Add sugar and beat well.
Add oil gradually and blend well.
Stir in potatoes.
Blend all dry ingredients and add to potato mixture.
Fold in nuts and fruit. Pour into 3 greased 1 1/2-quart loaf pans or mini loaf pans (1 cup batter per pan).
Bake at 350\u00b0 for 40 to 60 minutes.
Bread will leave sides of pan and crack when done.
This yields 3 loaves or 4 mini pans plus 1 Bundt pan.
Keeps and freezes well.
