Sweet And Sour Potato Salad - cooking recipe
Ingredients

8 boiled potatoes
2 hard-boiled eggs, sliced
3 sweet-sour pickles
4 slices bacon, diced
1 c. sugar
1/2 tsp. salt
1/2 c. vinegar, diluted with 1/2 c. water
1 stalk celery, diced
1 onion, minced
1 Tbsp. parsley
2 eggs, well beaten
1/4 tsp. dry mustard
1/2 tsp. pepper
Preparation

Boil potatoes in their jackets.
When soft, cool, peel and dice.
Add celery, eggs, onions, pickle and parsley.
Fry bacon until crisp and brown.
Beat eggs; add sugar, spices and diluted vinegar.
Mix well.
Pour egg mixture into the hot bacon fat and cook, stirring constantly, until thickened, about 10 minutes. Pour over potato mixture and mix lightly.
Allow to stand several hours before serving.
Makes 6 servings.
