Turkey Sausage Casserole - cooking recipe

Ingredients
    1 lb. turkey smoked sausage
    1/2 c. sliced fresh mushrooms
    1/2 c. sliced carrots
    1 medium zucchini, cut in half lengthwise and sliced (about 1 1/4 c.)
    2 Tbsp. margarine or butter
    1 can stewed tomatoes (undrained)
    1 c. water
    1/4 tsp. dried basil leaves
    1/4 tsp. dried thyme
    1 1/2 c. uncooked Minute rice
Preparation
    Cut sausage into serving size pieces; set aside.
    Saute mushrooms, carrots and zucchini in butter in a large skillet over medium-high heat.
    Add tomatoes, water, basil, thyme and sausage. Bring to a boil.
    Reduce heat to low, cover and simmer 5 minutes. Mix rice into liquid, cover, remove from heat and let stand 8 minutes.
    Stir after 4 minutes.
    Makes 4 servings.
