Pumpkin Apple Mini Muffins - cooking recipe

Ingredients
    2 1/2 c. flour
    2 c. sugar
    1 tsp. pumpkin pie spice
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs, beaten
    1 c. canned pumpkin
    1/2 c. vegetable oil
    2 c. finely chopped apple
Preparation
    In a large bowl, combine first 5 ingredients.
    Add liquid ingredients and stir just until moist.
    Stir in apples.
    Spoon batter into greased tins, filling 3/4 full.
    Bake at 350\u00b0 for 20 to 25 minutes or until toothpick comes out clean.
    Makes 18 regular muffins or 4 to 5 dozen mini muffins.
