Enchilada Casserole - cooking recipe
Ingredients

1 c. chopped onion
1/2 c. plus 2 Tbsp. vegetable oil, divided
2 lb. ground beef
1 (14 1/2 oz.) can tomatoes
1 (8 oz.) can tomato sauce
2 (1 1/2 oz.) pkg. enchilada sauce mix
1/2 c. water
2 (15 oz.) cans pinto beans (undrained)
12 tortillas
1 c. shredded Cheddar cheese
1 medium tomato, chopped
1 c. shredded lettuce
Preparation

Saute onion and green pepper in 2 tablespoons of oil until soft.
Add 2 tablespoons of oil and ground beef.
Cook slowly until lightly browned, using Dutch oven.
Stir in tomatoes, tomato sauce, enchilada sauce mix, water and beans.
Simmer, uncovered, for 10 minutes.
