Butternut Squash And Corn Casserole - cooking recipe

Ingredients
    1 lb. butternut squash or pumpkin
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    2 Tbsp. butter
    1 (17 oz.) cream-style corn
    1 c. coarsely crushed Ritz crackers
    1/2 c. shredded cheese
    2 Tbsp. chopped pimento (optional)
    1/4 c. chopped pecans (optional)
    1/2 tsp. nutmeg
Preparation
    Quarter squash.
    Remove seeds.
    In microwave-safe dish (1 1/2 quarts) place squash and 2 tablespoons water.
    Cook on High 10 minutes or until tender, mash.
    Microwave onion, green pepper and butter.
    Stir in mashed squash, corn, crackers, cheese and optional pimento and nuts.
    Cook 6 minutes.
    Sprinkle with nutmeg. Serves 5 to 6.
