Corny Onion Shortcake - cooking recipe

Ingredients
    1/4 c. margarine
    1 large sweet onion, finely chopped
    1 1/2 c. corn muffin mix
    1 egg
    1/3 c. milk
    1 c. cream-style corn
    1 c. sour cream
    1/2 tsp. salt
    1 c. shredded Cheddar cheese, divided
Preparation
    In skillet, melt butter over medium heat.
    Saute onion until tender. Remove from heat and set aside.
    In bowl, combine muffin mix, egg, milk and corn.
    Spread into a greased 9-inch pan. Combine sour cream, salt and 1/2 Cheddar cheese and spread over batter.
    Sprinkle with remaining cheese.
    Bake at 425\u00b0 for 30 minutes.
    Cut into squares; serve warm.
