Rhubarb Cake - cooking recipe
Ingredients

4 c. fresh diced rhubarb
1 c. sugar
1 c. chopped nuts
1 c. salad oil
1 tsp. vanilla
2 c. all-purpose flour
2 eggs, beaten
2 tsp. cinnamon
2 tsp. baking soda
1 c. raisins (optional)
1/2 c. sour cream
Preparation

In a bowl, coat rhubarb pieces with sugar; set aside.
In a large bowl, stir remaining ingredients together; mix well.
Stir in coated rhubarb pieces.
Turn mixture into lightly greased and floured 9 x 13-inch pan.
Bake at 375\u00b0 for 40 to 45 minutes or until inserted toothpick comes out clean.
Serve cold, plain or with whipped cream.
