Stuffed Zucchini Squash - cooking recipe

Ingredients
    6 medium zucchini
    3 c. soft bread crumbs
    1/2 c. Parmesan cheese
    1 small onion
    3 Tbsp. minced parsley
    1 tsp. salt
    dash of pepper
    2 beaten eggs
    2 Tbsp. butter
Preparation
    Wash zucchini; cut off ends.
    Cook in boiling water (salted) for 5 minutes.
    Halve lengthwise; remove pulp with spoon.
    Combine pulp with bread crumbs, cheese, onion, parsley, salt, pepper and eggs.
    Fill zucchini shells.
    Dot with butter.
    Sprinkle with more cheese.
    Bake in moderate oven (350\u00b0) for 30 minutes.
    Makes 6 servings.
