Wild Rice-Apple Stuffing - cooking recipe

Ingredients
    1 Tbsp. margarine
    vegetable cooking spray
    1/2 c. finely chopped onion
    1 c. finely chopped unpeeled Granny Smith apples
    2 c. cooked wild rice (cooked without salt or fat)
    3/4 c. low sodium chicken broth
    1/4 c. unsweetened apple juice
    1/4 c. raisins
    1/2 tsp. salt
    1/2 tsp. rubbed sage
    1/2 tsp. dried whole thyme
    1/8 tsp. ground nutmeg
    6 (3/4 oz.) slices cracked wheat bread, cut into 1/2-inch cubes
Preparation
    Melt margarine over medium heat in a large skillet coated with cooking spray.
    Add celery and onion; saute 3 minutes.
    Add apple; saute 5 minutes or until apple is tender.
    Combine apple mixture, rice and remaining ingredients in a 2-quart casserole; stir well.
    Cover and bake at 350\u00b0 for 40 minutes.
    Uncover and bake 5 minutes.
    Yield:
    6 servings.
