Sweet Potato Pie - cooking recipe

Ingredients
    3 to 4 c. mashed sweet potatoes
    4 eggs
    1 1/2 c. sugar
    1 tsp. salt
    1 1/2 to 2 Tbsp. pumpkin pie spice
    2 cans evaporated milk (Carnation, Pet, etc.)
Preparation
    Beat eggs lightly in a large bowl.
    Stir in remaining ingredients, making sure milk is last.
    Pour into two unbaked pie shells.
    Bake for 15 minutes at 425\u00b0.
    Reduce to 350\u00b0 and continue baking for 40 to 50 minutes more or until knife inserted comes out clean.
    Cool and serve as you would regular pumpkin pie.
