8 ears fresh corn
1 Tbsp. peanut oil
2 tsp. butter
1 onion, chopped
1 green bell pepper, seeded and chopped
2 cloves garlic, minced
2 large ripe tomatoes, seeded and chopped
1 tsp. cajun Spice mix
