Macque Choux - cooking recipe

Ingredients
    8 ears fresh corn
    1 Tbsp. peanut oil
    2 tsp. butter
    1 onion, chopped
    1 green bell pepper, seeded and chopped
    2 cloves garlic, minced
    2 large ripe tomatoes, seeded and chopped
    1 tsp. cajun Spice mix
Preparation
    Best described in the South as smothered corn.
    May be prepared ahead and stored in the refrigerator for up to 2 days.
