Zucchini Parmesan - cooking recipe
Ingredients

2 tsp. olive oil
1 medium onion, coarsely chopped
1 clove garlic, finely chopped
2 medium firm red tomatoes (3/4 lb.)
2 medium zucchini (3/4 lb.)
1/4 tsp. basil (fresh if available)
1/4 tsp. oregano (fresh if available)
1/4 c. Parmesan cheese
1/4 c. Italian bread crumbs
1/2 c. shredded Mozzarella cheese
1/4 tsp. paprika (optional)
cooked pasta or rice
Preparation

In heavy skillet (with metal handle) heat oil.
Add onion and saute until golden.
Add garlic and cook until slightly brown. Stir in tomatoes.
Cook, stirring occasionally, for 2 minutes.
