Family Favorite Carrot Cake - cooking recipe

Ingredients
    1 c. raisins
    boiling water
    2 1/3 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. baking powder
    2 c. lightly packed finely shredded carrots
    3/4 c. milk
    1 tsp. ground cinnamon
    1 1/2 c. sugar
    3/4 c. shortening
    3 eggs
    1/2 c. chopped walnuts
    Lemon Cream Cheese Frosting
Preparation
    Cover raisins with boiling water; let stand 5 minutes.
    Drain. Combine flour, baking powder, cinnamon, baking soda and salt.
    In large bowl, beat sugar, shortening and eggs until fluffy.
    Add flour mixture and milk; beat on medium speed for 2 minutes.
    Stir in carrots, raisins and nuts.
    Spread into greased and floured 13 x 9-inch baking pan.
    Bake 35 minutes or until wooden pick comes out clean.
    Cool completely.
