A Crock Of Spinach - cooking recipe

Ingredients
    2 (10 oz.) frozen chopped spinach, drained*
    2 c. cream-style cottage cheese
    1/2 c. butter, cut into pieces
    1 1/2 c. Cheddar cheese, cubed
    3 eggs, beaten
    1/4 c. flour
    1 tsp. salt
    1/2 c. milk
    1 egg
    1 c. flour
    1 1/2 tsp. baking powder
    1/2 of 1 oz. pkg. Ranch dip mix
    2 c. shredded zucchini
Preparation
    Fill deep fryer or skillet 2 inches with oil; heat to 375\u00b0. Combine milk and egg in a bowl.
    Stir together dry ingredients in a separate bowl and then add to egg mixture; blend well.
    Fold in zucchini.
    Drop batter by rounded teaspoonful into hot oil.
    Fry until golden brown, turning once.
    Drain fritters of excess oil on paper towel.
    Serve warm.
    Makes 1 1/2 to 2 dozen.
