Cilantro Potatoes - cooking recipe

Ingredients
    4 medium potatoes
    1/4 c. sliced green onions
    1/2 c. shredded Monterey Jack cheese
    1/4 c. low-fat Ricotta cheese
    1/2 c. fresh cilantro
    1/4 c. fresh chopped parsley
    1 clove minced garlic
    1/4 tsp. salt
    1/4 tsp. white ground pepper
Preparation
    Wash and bake potatoes in oven at 400\u00b0 for 45 minutes to 1 hour or until done.
    While potatoes are baking, combine the remainder of the ingredients and toss it lightly in a bowl.
    When potatoes are done, remove from the oven and let them cool to the touch.
    Cut the potatoes in half lengthwise and fluff with a fork.
    Top each potato with approximately 1/4 of the topping mixture.
    Return to oven or microwave just long enough to melt cheese.
    Serve immediately.
