Cheese Scalloped Corn Casserole - cooking recipe
Ingredients

4 slices bacon
1 1/4 c. crushed saltine crackers
1 medium onion, chopped
1 (4 oz.) jar pimientos, diced (optional)
1 c. grated Cheddar cheese
1 (1 lb.) can cream-style corn
1 c. milk
1/2 tsp. salt
1/2 tsp. pepper
2 eggs
Preparation

Cook bacon until crisp.
Remove from skillet.
Mix 2 tablespoons bacon drippings with 1/4 cup cracker crumbs; set aside for the topping.
Cook onion in remaining drippings until tender. Add remaining cup of cracker crumbs.
Mix and brown slightly. Combine onion crumb mixture with beaten eggs.
Add other ingredients.
Mix well.
Pour in a shallow baking dish; sprinkle with reserved crumbs.
Bake at 350\u00b0 for 45 minutes.
