Gorgonzola Chicken Breasts With Port Wine - cooking recipe
Ingredients

4 chicken breast halves, boned and skinned
1/2 c. crumbled Gorgonzola cheese
2 eggs
flour, salt and pepper
1/4 c. unsalted butter
1 shallot, peeled and minced
1/2 c. Port wine
Preparation

Place chicken breasts on flat surface.
With sharp knife parallel to surface and beginning at curved edge of chicken breast, cut each lengthwise to within 1/4-inch of opposite edge.
Open each piece out flat and sprinkle 2 tablespoons cheese over one-half. Fold second half over cheese and press edges to close.
Dip chicken in egg, then flour that has been seasoned to taste.
Then finally in bread crumbs to coat lightly.
