Spanish Rice - cooking recipe
Ingredients

1 Tbsp. oil
1 c. long grain rice
1/8 c. onion slices
1 garlic clove, minced
1/2 tsp. ground cumin
1 tsp. salt
1/4 tsp. pepper
1/4 c. tomato sauce
2 1/2 c. water
1/4 c. diced carrots, peas or green peppers (optional)
Preparation

Cook rice, oil, onion and garlic over medium heat in large skillet until rice is browned.
Add remaining spices, tomato sauce, water and vegetables.
Cook over medium heat 10 to 15 minutes until water is absorbed.
Reduce to low and cover last 5 minutes for fluffy rice.
Makes 6 to 8 servings.
