Louisiana Shrimp Bake - cooking recipe

Ingredients
    1 c. sliced celery
    1 medium sliced onion
    1/2 c. chopped green pepper
    1 lb. can tomatoes
    1/4 c. cooking sherry
    4 hard-cooked eggs, sliced
    3 c. cooked rice
    1/4 c. butter
    1/4 c. flour
    1 1/2 tsp. salt
    7 oz. pkg. frozen shrimp
    1 1/2 c. shredded Cheddar cheese
Preparation
    Preheat oven to 375\u00b0.
    Saute celery, onion and green pepper in medium saucepan, about 15 minutes.
    Blend in flour and salt; cook until bubbly.
    Stir in tomatoes, shrimp and sherry.
    Bring to boil; simmer, covered, for 10 minutes.
    Stir in 1/2 cup of the cheese. Add eggs.
    Pour into 2-quart casserole.
    Top with rice and sprinkle with remaining 1 cup cheese.
    Bake for 25 to 30 minutes. Serves 6 to 8.
