Cream Of Potato Soup - cooking recipe
Ingredients

6 c. potatoes (about 5 large)
1/2 c. sliced carrots
6 slices bacon
1 c. chopped onion
1/2 c. chopped celery
1/2 tsp. pepper
1 1/2 tsp. salt
2 c. milk
2 c. light cream
shredded Cheddar cheese
parsley sprigs
Preparation

Cook potatoes and carrots in boiling water until tender. Drain.
Cook bacon until crisp.
Drain and crumble.
Saute and celery in 2 tablespoons bacon fat.
Combine cooked vegetables, bacon, salt, pepper, milk and cream.
Simmer for 30 minutes.
(Do not boil.)
Garnish with shredded Cheddar cheese and parsley. Yields 2 quarts.
