Ingredients

short crust pastry (using 4 oz. flour)
a little jam
1 oz. butter
1 egg
2 oz. caster sugar
4 oz. coconut
1/4 tsp. baking powder
Preparation

Roll out the pastry and line an 8-inch sandwich tin.
Spread the jam over the bottom.
Melt butter.
Stir in egg, sugar, coconut and baking powder.
