Pumpkin Bread - cooking recipe
Ingredients

3 1/2 c. all-purpose flour
3 c. sugar
1 1/2 tsp. salt
2 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. vegetable oil
4 large eggs
2/3 c. water
2 c. canned pumpkin
1 c. chopped pecans or walnuts
Preparation

Blend dry ingredients in bowl until well mixed.
Combine oil, eggs, water and pumpkin and beat until well blended.
Add dry ingredients slowly and beat well.
Stir in pecans that have been dusted with flour and pour batter into greased loaf pans.
Bake in preheated oven at 350\u00b0 for 1 hour and 15 minutes for large loaves or 60 to 65 minutes for small loaves.
Cool 10 minutes before removing from pans and continue cooling on wire racks.
Wrap in foil and keep in refrigerator or freeze.
Yield:
2 large loaves (9 x 5 x 3-inch) or 3 small loaves (8 x 4 x 2-inch).
