Don Pablo-Like Queso Dip - cooking recipe

Ingredients
    1 c chopped onion (adjust to taste)
    3 cans (10 oz each) Rotel diced tomatoes with green chilies
    1 can (14.5 oz) stewed tomatoes, chopped
    2 lb Velveeta cheese, cubed
    chips of your choice
Preparation
    Saute onion in butter. Add tomatoes with chilies and stewed tomatoes. Cook until thick. Add cheese. Cook until thick and smooth, stirring often to keep from sticking. Refrigerate overnight. Heat to eat. Serve with chips of your choice.
