"Cream" Of Broccoli Soup - cooking recipe

Ingredients
    1 bunch fresh broccoli, chopped
    1 Tbsp. vegetable oil
    1 small onion, minced
    1 glove garlic, minced
    2 c. chicken broth, fat removed
    2 c. low-fat or skim milk
    pepper to taste
Preparation
    In a large saucepan or Dutch oven, saute onion and garlic in vegetable oil until onion is clear but not browned.
    Add the broth and bring to a boil.
    Add the broccoli.
    Reduce heat, cover and simmer until
    broccoli is tender (about 10 minutes).
    Remove from heat; add milk and seasoning.
    Puree in blender.
    Reheat in pan prior to serving.
    Serves 4 to 6.
