Potato And Leek Soup - cooking recipe

Ingredients
    4 cups or 1 lb potatoes, peeled
    3 cups or 1 lb leeks or yellow onions
    2 qts. water
    1 tbsp salt
    8 tbsp whipping cream
    3 tbsp. chopped parsley
Preparation
    Combine first 4 ingredients and simmer 40-50 minutes until vegetables are tender. Mash vegetables with a fork. Serve in individual bowls. Stir in 1 tbsp. or whipping cream and garnish with parsley. This soup is also excellent served cold.
