Sparkling Berry Salad - cooking recipe

Ingredients
    2 c boiling diet cranberry juice cocktail
    1 pkg (8 serving size) or 2 pkg (4 serving size) jello
    sugar free any red flavor
    1 1/2 c. cold seltzer or club soda
    1/4 c. creme de cassis liqueur (optional)
    1 tsp. lemon juice
    3 c. assorted berries (blueberries, raspberries, and sliced strawberries) divided
Preparation
    Stir boiling cranberry juice into gelatin in large bowl, at least 2 minutes until completely dissolved. Stir in cold seltzer, liqueur and lemon juice. Refrigerate about 1 1/2 hours or until thickened. Stir in 2 cups of the berries. Spoon into 5 cups. Refrigerate four hours or until firm. Unmold. Top with remaining 1 cup berries.
