Strawberry Muffins - cooking recipe

Ingredients
    1 1/2 c. flour (unsifted)
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. sugar
    1 tsp. vanilla
    1 tsp. butter flavor extract
    1 1/4 c. fresh, sliced strawberries
    2 eggs, well beaten
    2/3 c. Mazola oil
    1/2 c. chopped pecans (optional)
Preparation
    Sift dry ingredients into a large bowl.
    Mix remaining ingredients and add to dry ingredients.
    Mix just until the dry ingredients are moist; do not overmix.
    Pour into greased muffin tins and bake in 375\u00b0 oven for 25 minutes.
    Best if removed from tin immediately.
    I use cupcake papers and then no need to grease muffin tins.
    Also easy to remove from pan.
