Wild Rice Chicken Salad - cooking recipe
Ingredients

1 (6 oz.) pkg. wild rice/long grain rice
1 lb. boneless, cooked chicken breasts
1/2 tsp. salt
3/4 c. mayo
1 Tbsp. milk
2 to 3 Tbsp. lemon juice
3/4 c. seedless grapes, cut in half
3/4 c. sliced celery
3/4 c. coarsely chopped cashews
2 Tbsp. chopped spring onion
Preparation

Prepare rice as directed on package.
Refrigerate until chilled.
Cut chicken into cubes.
In small bowl, mix salt, mayo, milk and lemon.
In large bowl, mix chicken, grapes, celery, cashews, onion and chilled rice.
Fold in mayo mixture. Refrigerate 2 to 3 hours.
Serves 8 to 10.
