Broiled Fish(Pesce Alla Griglia) - cooking recipe

Ingredients
    1 (2 lb.) rockfish or trout
    3 Tbsp. vinegar
    1 clove garlic, minced
    juice from 1 lemon
    1 Tbsp. parsley
    2 Tbsp. olive oil
    salt and pepper to taste
    1 top piece celery
Preparation
    Preheat
    broiler.
    Wash
    fish
    thoroughly
    under
    cold water. Pat dry and place on
    broiler pan that has been rubbed with oil. Cut two 1-inch slits
    on
    each side of fish.
    Whisk together vinegar, garlic,
    lemon
    juice,
    parsley,
    olive oil, salt and pepper.
    With leafy
    top
    of
    celery, baste fish with vinegar mixture.
    Place under hot
    broiler
    and broil 10 to 15 minutes per side, basting often.
    Makes 2 to 4 servings.
