Southern Fried Chicken - cooking recipe

Ingredients
    2 to 3 lb. fryer chicken
    1 Tbsp. salt
    black pepper
    2 to 3 c. self-rising flour
    dash of red pepper
    1 to 2 c. Crisco
Preparation
    Cut chicken into 11 pieces. Wash thoroughly.
    Place chicken in a large bowl. Cover with cold water.
    Add 1 tablespoon salt. Refrigerate 1 to 2 hours. Drain. Sprinkle with salt again, if desired and lots of black pepper.
    In another bowl, place flour. Add dash of salt, black pepper and ground red pepper.
    Mix thoroughly.
