Alabama Lemon Cake - cooking recipe

1 c. softened margarine, divided
1/2 c. shortening
2 c. sugar
3 eggs
3 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
2 Tbsp. grated lemon rind, divided
1 Tbsp. lemon juice
Preparation

Preheat oven to 325\u00b0.
In a mixing bowl, beat sugar, shortening and 1/2 cup margarine together until light and fluffy. Beat in eggs, one at a time.
Sift flour, baking soda and salt together and alternately stir in with buttermilk.
Stir in 1 tablespoon of lemon rind and the lemon juice.
Pour into a greased 9-inch pan.
Bake for 1 hour and 15 minutes or until toothpick (when stuck in center of cake) comes out clean.
Cool for 10 minutes, then remove from pan.
